We are just back home from Mexico, and despite eating this dish many times there, we are already missing it πŸ˜› Chicken fajitas are an easy dish to prepare and our kids love it! So here is our version. We didn't have Corona, so we used an Italian craft beer.

 4 Tortillas (8 if they are small)
 3 tbsp Olive Oil
 2 tsp Honey
 1 pinch Cumin Seeds
 300 g Chicken Breast
 2 Sweet Peppers
 1 Ripe Tomato
 1 Shallot
 1 cup Mexican Beer
 Salt
 Pepper

Cut the chicken breast in slices and put in container.

Add honey, 1 tbsp oil, salt, pepper, cumin seeds (or powder if you prefer).

Cover with beer and let marinate for 1 hour.

Cut the shallot into very tine slices, the sweet pepper into strips and the ripe tomato into cubes.

Add oil in the pan, and add the shallot.

When the shallot become gold, add the tomato.

Wait 1 minute and add the pepper strips and salt as required.

After ten minutes add the chicken with the marinating, and cook for other 10/15 minutes.

Warm the tortillas (you can buy or home made them) and serve with guacamole, Mexican beans, Mexican Sauce (we usually buy Old El Paso one or make it yourself) and ripped cheese (emmentaler).

Everyone at the table just has to add the ingredients as he prefers and made his own wrap πŸ™‚
