I learned to cook Spatzle from Claudio, a friend studying at University with me. Only after I have been introduced by my gran mother (who lived in South Tyrol for a long time) how to prepare them without the machine. It's a very easy dish, and we love it 🙂

Pasta
 160 g boiled spinat
 250 g flour
 2 eggs
 100 ml water (or milk)
 salt
 nutmeg
Sauce
 150 g ham
 250 ml cream
 salt
 pepper
 Parmisan
 butter

Dough preparation

Prepare all the ingredients 🙂

Grind the spinach

Add the eggs and mix.

Add a bit of nutmeg

Add the flour and mix till you obtain a consistent dough (if you don't have the machine to cut the spatzle on top of the top, you will have to cut them by hand, so you would need a more consistent dough).

It's time to put a pot with water on the fire and to start preparing the sauce!

Check you have all the ingredients ready! Cut the ham into cubes if you haven't yet.

Add the butter the pan.

Once the butter is melted, add the ham.

Once the ham fried for one or two minutes, add the cream.
Cook for few minutes and turn the fire the minimum to keep the sauce warm.

Get ready the magic machine 🙂 You would need also a ladle to put the dough in the machine, and skimmer to take the ready spatzle out of the boiling pot.

When the water in your pot is boiling, put the machine on top of the pot.
Use the ladle to put some pastry in the machine and move the machine so that the pastry goes down through the holes and get cut.
Don't put all the dough in at the same time, or the pasta will not cook properly. You will need to repeat the operation more times.

After 1-2 minutes the pasta will be ready. You will notice that the spatzle will float on the top.

With as skimmer collect the spatzle and put them in the pan with the sauce.
Repeat the last 3 operations until you haven't consumed the dough.

Warm and mix the spatzle with the sauce.
Add pepper and salt as needed, plus parmisan if you like it.

You are ready to serve it 🙂
